The husband and I just had a roasted potato
cook-off. We now have TWO new awesome recipes. His was the cowboy
fire-roasted potato, and mine was the French oven-roasted potato. Mmm!
Dreaming of steak, eggs and home fries for breakfast.
Cowboy Fire-Roasted Potatoes
Fire up the grill.
Cube yukon gold potatoes
Layer in aluminum foil
Sprinkle with garlic black pepper and oregano
Drizzle with olive oil and butter
Salt and Pepper to taste
Close the aluminum foil and set on the grill. Cook for one hour while you grill the rest of dinner.
French Oven-Roasted Potatoes
Preheat oven to 375
Cube yukon gold potatoes
Layer in baking sheet
Generously sprinkle with Herbes de Provence
Salt and pepper to taste
Drizzle with olive oil
Toss potatoes in pan with spatula to coat each piece well
Bake for 30 minutes; remove from oven and toss potatoes again; bake another 30 minutes.
