First Dozen Eggs; First Meal!

 Today, we finally had enough eggs for our first dozen, actually enough to make a baker's dozen. Yippee! 

It has been raining so hard this week that the solar panel for the coop lights was not charging. So, egg laying was sporadic for the last week. We still seem to only have two or three birds laying. I'm hopeful that the return of some sun will help the others start laying soon.

In honor of our first dozen, I wanted to cook a meal for the whole family to share. The best time is the weekend, so dinner tonight it was. I cooked salmon cakes with poached eggs and a red bell pepper remoulade. It was wonderful!
